We work with Noel Sweeney, a world-renowned Master Distiller and Blender, to select the finest casks of our current Single Pot Still Irish Whiskeys for bottling. Noel’s experience is unparalleled in Irish whiskey, and we are delighted to have his vote of confidence in the quality of our releases.

Once harvested, our precious grain travels to Great Northern Distillery, where it undergoes the traditional Irish triple-distillation in authentic pot stills. This meticulous process ensures the purity and character of our spirit.

The journey continues back in Waterford, where our whiskey matures gracefully in the mild maritime climate. We carefully select three distinct cask types to impart layers of complexity and flavour.

Seasoned Oloroso sherry butts impart rich dried-fruit notes, decadent dark chocolate, and a hint of clove. These seasoned casks provide a deep mahogany hue alongside heavy notes of sticky raisins, toasted walnuts, and a whisper of orange peel. The fortified wine's influence creates a luxurious, full-bodied texture that rounds out the spirit with a long, warming finish. bestow rich dried fruit, decadent dark chocolate and a hint of clove.

Virgin French Oak casks impart a sophisticated architectural profile characterized by firm tannins and a silky mouthfeel. These fresh barrels deliver a direct infusion of toasted vanilla, roasted coffee beans, and a delicate dusting of aromatic nutmeg. The tight wood grain ensures a refined complexity that balances sweet wood sugars with a dry, peppery finish.

Ex-bourbon casks offer a classic foundation of creamy vanilla, sweet honey, and bright citrus zest. The charred American oak softens the spirit while introducing layers of toasted coconut and indulgent caramel to the palate. This maturation process results in a clean, vibrant finish that emphasizes the natural sweetness and fruity character of the distillate.

These whiskeys are aged separately, allowing their individual characters to fully develop before our globally recognised Master Blender, Noel Sweeney, expertly marries them. His unparalleled skill ensures a harmonious blend, delivering a truly complex and captivating flavour experience with every single sip.

My role as advisor to Curraghmore is to produce the best we can for each release from the varied expressions maturing in warehouse and to advise on how to innovate but keep true to the authentic quality of Irish Whiskey and The Curraghmore Single Estate legacy.

The Inaugural release

A carefully blended selection of Irish Pot still whiskeys all triple distilled from cereal grown on Curraghmore Estate, and then matured separately in a virgin French oak half barrel, an ex-Oloroso sherry and an ex-Bourbon barrel. This was carefully blended to maximise the flavours and deliver a truly complex and unique whiskey.
